Corn and Zucchini Fritters
Take 5 ingredients
I am absolutely have a thing for corn fritters and try to make them for lunch at any opportunity. Ring in the changes with what you have on hand and substitute other green things for zucchini if you don’t have one available. Beat the egg in a small bowl till thick and fluffy. Add the other ingredients and stir through lightly till just mixed — no longer or you will lose the fluff of your egg.
Cook fritters in a pan with a splash of oil. Eat just as they are or pile them up with sour cream,yogurt, relish, your favourite sauce, hummus, guacamole… you get the idea.
