Take 5: Butter, golden syrup, brown sugar, flour, ginger.
These biscuits are quick to make when you need a buttery sugar fix – though it’s probably not good form these days to speak of such a requirement. They are slightly chewy and sticky, so not really a crisp biscuit, but I still think they would make a nice foil or ice cream – either alongside or sandwiched around a slightly flattened scoop of hokey pokey. They would be perfect to serve with a banana split – some things just can’t be bettered.
Put your oven on to 180°C (356°F). Over a low heat, melt 180g butter in a pot with 1/2 cup golden syrup and 2/3 cup brown sugar. Remove from the heat, then stir in 1 cup flour and 1 teaspoon ginger.
Drop spoonfuls of the mixture onto trays lined with baking paper. Bake for about 5 minutes or till they are golden, but watch them carefully. Now make a cup of tea and try one…
